Healthy Hazelnut Cookies

Hazelnut cookies made from Metta Gluten Free Flour

Simple to bake healthy and delicious hazelnut vegan cookies made from Metta Gluten Free Flour that are sure to go perfect with afternoon tea!

Prep time:  5 – 10 minutes                                                   

Cook time: 20 – 23 minutes

Total time: 25 – 33 minutes

INGREDIENTS:

  • 1 cup Metta GF flour
  • ½ cup coconut milk, cold
  • 3 Tbsp coconut oil, room temperature
  • ⅓ cup coconut sugar
  • 1 Tbsp vanilla extract
  • ¼ tsp Himalayan salt
  • 1 cup hazelnuts, roasted and skinned

DIRECTIONS:

  1. Preheat oven to 325 degrees F. Line a cookie sheet with parchment paper and set aside.
  2. In the food processor, if using hazelnuts or a preferred nut, pulse it until they are finely ground. Set aside.
  3. In a large bowl, beat together the flour, salt, coconut oil, coconut sugar, ground nuts, vanilla extract and coconut milk. Mixture should be able to stick together when pressed into balls.
  4. Roll the dough into 1-inch balls and place on the prepared cookie sheet. Bake for 20-23 minutes, or until tops are slightly golden brown. Let cookies cool and enjoy 😊
