Simple to bake healthy and delicious hazelnut vegan cookies made from Metta Gluten Free Flour that are sure to go perfect with afternoon tea!
Prep time: 5 – 10 minutes
Cook time: 20 – 23 minutes
Total time: 25 – 33 minutes
INGREDIENTS:
- 1 cup Metta GF flour
- ½ cup coconut milk, cold
- 3 Tbsp coconut oil, room temperature
- ⅓ cup coconut sugar
- 1 Tbsp vanilla extract
- ¼ tsp Himalayan salt
- 1 cup hazelnuts, roasted and skinned
DIRECTIONS:
- Preheat oven to 325 degrees F. Line a cookie sheet with parchment paper and set aside.
- In the food processor, if using hazelnuts or a preferred nut, pulse it until they are finely ground. Set aside.
- In a large bowl, beat together the flour, salt, coconut oil, coconut sugar, ground nuts, vanilla extract and coconut milk. Mixture should be able to stick together when pressed into balls.
- Roll the dough into 1-inch balls and place on the prepared cookie sheet. Bake for 20-23 minutes, or until tops are slightly golden brown. Let cookies cool and enjoy 😊
