Peanut Butter Chocolate Chip Cookies

Peanut Butter Chocolate Chip Cookies made from Metta Gluten Free Flour

Great tasting yet easy recipe of vegan and gluten-free peanut butter chocolate chip cookies.  Healthy guilt free dessert or anytime snack!

Yield: 10-12                                                                 

Prep time: 5-10 minutes                                                     

Cook time: 10-12 minutes

Cooling time: 15 minutes

INGREDIENTS:

  • ⅓ cup peanut butter, or any other butter
  • ¼ cup Metta flour
  • ¼ cup sugar*
  • 2-3 Tbsp applesauce
  • ¾ tsp baking soda
  • ½ tsp pure vanilla extract
  • 1/8 tsp salt
  • ½ cup vegan chocolate chips (depending on your amount preference)

DIRECTIONS:

  1. Preheat the oven to 350°F then line a baking sheet with parchment paper.
  2. In a bowl, combine Metta flour with baking soda and salt.
  3. Add all the remaining ingredients and stir to form a dough.
  4. Roll into cookie balls gently flattening them and if you wish, press a fork gently creating hash marks to ensure the cookies cook evenly since peanut butter cookie dough is denser than other cookie doughs.
  5. Bake for about 10-12 minutes.
  6. Let cool for at least 15 minutes and enjoy 😊

* To make it sweeter, add 1/3 cup of sugar instead of 1/4 cup. You can also use a natural sugar like coconut sugar
