Great tasting yet easy recipe of vegan and gluten-free peanut butter chocolate chip cookies. Healthy guilt free dessert or anytime snack!
Yield: 10-12
Prep time: 5-10 minutes
Cook time: 10-12 minutes
Cooling time: 15 minutes
INGREDIENTS:
- ⅓ cup peanut butter, or any other butter
- ¼ cup Metta flour
- ¼ cup sugar*
- 2-3 Tbsp applesauce
- ¾ tsp baking soda
- ½ tsp pure vanilla extract
- 1/8 tsp salt
- ½ cup vegan chocolate chips (depending on your amount preference)
DIRECTIONS:
- Preheat the oven to 350°F then line a baking sheet with parchment paper.
- In a bowl, combine Metta flour with baking soda and salt.
- Add all the remaining ingredients and stir to form a dough.
- Roll into cookie balls gently flattening them and if you wish, press a fork gently creating hash marks to ensure the cookies cook evenly since peanut butter cookie dough is denser than other cookie doughs.
- Bake for about 10-12 minutes.
- Let cool for at least 15 minutes and enjoy 😊
* To make it sweeter, add 1/3 cup of sugar instead of 1/4 cup. You can also use a natural sugar like coconut sugar
