Simple 5-ingredient recipe of gluten free crepes that is quick to make, but simply delicious to eat 🙂

Total time: 20 minutes
Ingredients
- 1/3 Cup Metta GF flour
- 1/2 Cup milk (sub any non-diary milk)*
- 1 egg (or equivalent replacement)*
- 1 tsp sugar
- Oil or butter for cooking
- 1/2 tsp vanilla extract (optional)
- 1/4 tsp nutmeg (optional)
*Note: Results will vary with the non-dairy and egg replacements.
Directions
- In a bowl, add milk and egg (or their replacement) and whisk well.
- Add sugar and mix.
- Sift Metta GF flour and whisk well. The batter should be smooth. If batter is too thick, add just a little more milk or water. Let it sit for 5 minutes while the non-stick skillet or iron skillet heats.
- Once the skillet is heated, maintain the heat at medium, pour some oil or butter and swirl it around.
- Add 1/4 cup of the crepe batter and swirl the pan around until the batter is evenly spread out.
- When you see bubbles forming in the center of the crepe, flip it and allow to cook for another 90 seconds.
- Repeat for the next one. Recommend using oil or butter for each crepe.
- Roll or fold and eat with any topping of your choice. Enjoy 🙂
