YIELD: 24 cookies, small

These gluten free cookies are crispy on the outside and soft and chewy on the inside. They are loaded with macadamia nuts and white chocolate chips. If you use dairy-free white chocolate chips, they will be vegan as well, but trust me no one will ever know they are gluten-free and vegan!
Ingredients
- ¼ C coconut oil sold, neither from the fridge nor melted
- 1 ⅓ C Metta gluten free flour
- ¾ C brown sugar, packed
- 3 Tbsp dairy-free yogurt (I used organic coconut creamy yogurt)
- 2 Tbsp dairy-free milk (I used organic oat milk)
- ⅓ C macadamia nuts, chopped
- ¾ C dairy-free white chocolate chips (I used the organic Walmart brand)
- 1 tsp vanilla extract
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp sea salt
Instructions
- Put coconut oil and brown sugar in a bowl of an electric mixer. Cream for 30 seconds to mix them well.
- Add yogurt, milk, and vanilla. Mix to combine.
- In a separate bowl, mix together Metta flour, baking powder, baking soda and salt.
- Slowly add the dry ingredients to the wet mixture. Blending them together as you add gradually.
- Next, add the chopped macadamia nuts and white chocolate chips and fold dough to incorporate.
- Scoop the dough using a cookie scooper on a parchment lined cookie sheet. You can also roll the scooped cookies between your hands to form smooth balls if you want.
- Slightly flatten each of the scooped dough using your fingers. Put the tray(s) with cookies in the freezer for 30 minutes.
- Pre-heat the oven to 350 F.
- After 30 minutes, bake cookies for 10 – 12 minutes. Cookies should be brown around the edges, but not too brown on top and then enjoy 😊
