Super easy and delicious apple cinnamon mug cake made with Metta Gluten Free flour that you are absolutely going to love. This one also happens to be VEGAN! Ready within minutes and it’s perfect for a single-serve dessert, quick breakfast, or cold weather snack.

INGREDIENTS
Cake
- 2 Tbsp Metta GF flour
- 1 – 1 ½ Tbsp sugar (I used brown vegan sugar)
- ¼ tsp ground cinnamon
- ¼ tsp baking powder
- 1 ½ Tbsp vegan butter, melted
- 1 ½ Tbsp non-dairy milk (I used oat milk)
- ¼ tsp vanilla extract
- 1-2 Tbsp diced apples
Toppings (optional)
- Maple syrup
- Chopped nuts
- Fruits berries, sliced strawberries, or any other fruit of choice
- Coconut whip
INSTRUCTIONS
- In a small bowl, mix together the first four dry ingredients (Metta GF flour, baking powder, sugar, cinnamon).
- In a ramekin or microwave-safe shallow bowl, blend in all the wet ingredients (butter, milk, vanilla extract).
- Mix the dry ingredients into the wet ingredients.
- Fold in the diced apples into the batter.
- Microwave on high for 1 minute initially. I had to do another 30 seconds for it completely cook.
- Carefully remove the hot ramekin or bowl. Let it cool for 3 -5 minutes. Garnish with topping(s) of your choice, here I used vegan coconut whip along with chopped walnuts and sprinkled cinnamon as a final touch, and enjoy 😊
