Everything Bagel Made from Metta Gluten Free Flour

This homemade gluten free and dairy free everything bagel recipe is super easy to make requiring only 8 simple ingredients with NO yeast or proofing required! The bagels come out soft and doughy, but crispy!

Prep time: 15 – 20 minutes                                                                                      

Cook time:  20 – 25 minutes

Total time: 35 – 45 minutes

Yields:        3 – 4 Bagels

INGREDIENTS:

  • 1 C Metta GF flour
  • 1 C cup non-dairy creamy yogurt (I used Kate Hill unsweetened almond yogurt)*
  • 1 whisked egg white
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp Apple Cider Vinegar
  • Everything Seasoning

Note: If dairy is not an issue, you can use Greek yogurt.

DIRECTIONS:

  1. Preheat oven to 400 F. Line a pan with baking sheet.
  2. In a large bowl, mix all the dry ingredients (flour, baking powder, baking soda, and salt).
  3. Then add the yogurt, egg white, and apple cider vinegar. Mix well until you have a doughy consistency.
  4. Transfer the dough to a lightly sprinkled floured surface. Mold the dough into a big ball and using a knife cut the dough into 3 or 4 equal pieces depending on the size of the bagels you want.
  5. Form here, you can shape them in two ways. First way is to roll each piece into a ball. Place each ball on the prepared baking sheet about 2 inches apart and place a floured finger in the center of each round dough, press down to the bottom and move around in circular motion to create a hole that is at least 1 inch wide. Second way is to roll each ball into a long shape and then pinching the ends together.
  6. Brush each bagel with egg wash. Then you can either sprinkle the seasoning on each bagel or carefully dip each bagel into everything seasoning.
  7. Bake in the oven for 20 – 25 minutes, until slightly golden and risen. Perform the toothpick test in the center of one bagel to make sure it comes out clean.
  8. Allow to cool for 20 minutes and enjoy 😋
  9. Can be stored in an airtight container at room temperature for 2 days or in an airtight container in the fridge for 5 days.
