No matter the season, this apple crumble will be a hit because it is so rich and crispy! You’ll never miss the gluten!

YIELD:           10 – 12 servings

PREP TIMcE: 15 – 20 minutes

COOK TIME: 45 – 48 minutes

TOTAL TIME: 60 – 68 minutes

Ingredients

Crumble Topping
  • 1  cup Metta flour
  • 1 cup gluten free rolled oats
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar*
  • 1 Tbsp ground cinnamon
  • ½ tsp freshly grated nutmeg or ¾ tsp ground nutmeg
  • ¼ tsp salt
  • 12 Tbsp unsalted butter, melted and cooled (for vegan, use Earth Balance butter)
Apple Filling
  • 3 pounds, or about 6 large apples of any tart and firm apple, peeled, cored, and sliced into 1/4-inch thick wedges
  • 2 Tbsp of Metta flour
  • 1 tsp ground cinnamon
  • ⅓ cup packed light brown sugar
  • ⅓ cup chopped or sliced almonds, or pecans or walnuts
Ice cream of choice (vanilla recommended) for serving (optional)

*Note: If you prefer, you can use 1 cup of brown sugar instead of using 1/2 regular sugar and 1/2 brown.

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 13 x 9-inch baking dish and set aside.
  2. Prepare the crumble topping in a medium sized bowl. Mix Metta flour, rolled oats, brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Combine well to work out any lumps in the sugar. Add the butter and combine well. The mixture should be thick. Put it in the refrigerator to chill for about 10-15 minutes or 5-7 minutes in the freezer so it firms up.
  3. To make the filling, place the apples in a large bowl. Add the flour, brown sugar, and cinnamon. Combine well.
  4. Transfer the apple mixture in a baking dish and spread them into an even layer.
  5. Scatter the nuts evenly over the top of the apple filling.
  6. Remove the crumble topping from the refrigerator or freezer. Scatter the topping evenly all over the top covering the entire apple filling. Press gently on the crumple topping to ensure that it is sticking to the filling.
  7. Cover the baking dish with aluminum foil and place it in the center of the oven. Bake for 25 minutes.
  8. Remove the foil. Bake for another 20 – 24 minutes until the crumble topping is golden brown and the apples are fork tender. You may have to increase the temperature of the oven to 415 degrees F and leave the dish on the top shelf for the last 2-4 minutes so it is nicely golden brown and crispy. During those last few minutes, keep checking every minute to ensure it doesn’t burn and blacken.
  9. Remove from the oven. Serve warm with ice-cream. It is just as tasty cold the next day after refrigeration  😊
