Lemon Bundt Cake made with Metta Gluten Free Flour

Gluten Free Lemon Bundt Cake

This moist lemon cake is unbelievably delicious with an intensely flavored lemon icing. Guaranteed to be a hit with all your friends and family. Plus, it’s so easy to make – ready in less than an hour! In addition to being gluten-free, it is also dairy-free with an option to make it egg-free and totally vegan!

Prep time: 15 minutes                                                                      

Bake time: 35 – 40 minutes

Total time: 50 – 55 minutes

INGREDIENTS

  • 2 C Metta GF flour
  • ¾ C almond flour
  • 1 ¼ C sugar (I used Zulki’s vegan sugar)
  • 1 ½ tsp baking soda
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 ¾ non-dairy milk (I used oatmilk)
  • 2 large eggs (vegan option, sub with egg substitute)
  • 2 Tbsp neutral oil (I used extra virgin olive oil)
  • 3 – 4 Tbsp lemon juice
  • Icing (Mix 1 C powdered sugar with 1 Tbsp lemon zest and 1-2 Tbsp lemon juice)*

Note: If making it vegan, be sure to use organic powdered sugar.

DIRECTIONS

  1. Preheat the oven to 350 F and spray a bundt pan with any oil.
  2. In a large bowl, add dry ingredients (Metta GF flour, almond flour, sugar, salt, baking powder and soda) and whisk to blend.
  3. In a small bowl, add wet ingredients (non-diary milk, eggs, oil, lemon juice, and vanilla extract) and whisk to blend.
  4. Gradually pour wet ingredients into the dry ingredients and mix until just barely mixed.
  5. Pour the batter into the greased pan and evenly spreading it all the way around in the pan.
  6. Bake in the oven for 35 – 40 minutes. Recommend checking in 30 minutes to see if the top is over browning. If it is, cover it with foil until the time is up. I did the toothpick test at 35 minutes, to see if it is done baking and it was so I removed it from the oven to allow it to cool for 20 – 30 minutes before transferring the bundt on a large round platter.
  7. Prepare the icing while the cake is cooling.
  8. Once completely cooled, drizzle the icing over the cake and enjoy😊
