These gluten free and vegan butter pecan cookies are easy to make at home with just a few simple ingredients. The taste of these cookies is buttery rich with a crisp that everyone will love. Trust me, no one will ever know that they are gluten-free and vegan!

Total time: 25 – 27 minutes
Yields: 16 – 22 cookies
INGREDIENTS
- 1 C Metta GF flour
- 1 stick or 8 Tbsp vegan softened butter (I used Country Crock plant butter avocado oil)
- ⅓ C granulated sugar (I used Zulka’s vegan sugar or use coconut sugar)
- ¾ – 1 C chopped pecans (plus some extra for topping)
- ½ tsp baking soda
- 1 tsp vanilla extract
DIRECTIONS
- Preheat the oven to 350 F and line two cookie sheets with parchment paper.
- Next, I crushed pecans in a pastel and mortar. Set it aside.
- Beat the butter in an electric mixer at medium speed until light and fluffy, about 1 minute.
- Add the sugar and continue to beat for another minute. Then add vanilla extract, Metta flour, and baking powder. Let it beat for 1 more minute until fully combined.
- Pour in the chopped pecans and let it mix on low speed for 30 seconds.
- Use a small cookie scooper to scoop out the dough onto the prepared cookie sheet about 1 1 ½ inches apart. Use your fingers to gently flatten the tops of the cookie dough.
- Sprinkle and gently press some largely chopped pecans on tops of each cookie dough.
- Bake in the oven for 10 – 12 minutes or until slightly golden. Remove from the oven.
- Allow them to cool on the sheet for about 5 minutes before transferring them onto a wire rack to cool for another 10 minutes. You can also enjoy a few while they are warm 😊

To make these cookies gluten and dairy free, I just substituted all-purpose flour with Metta Gluten Free flour, replaced the butter and sugar with vegan butter and sugar. Plus, I added ½ teaspoon of baking soda to the recipe to help the gluten free flour to rise.
