Gluten Free & Vegan Crepes

Vegan Crepe Made From Metta Gluten Free Flour

These gluten free and vegan crepes are delicious and so easy to make! Great for breakfast or dessert!

Prep time: 5 minutes

Resting time: 5 minutes

Cook time: 10 minutes

Total time: 20 minutes

Ingredients

  • ¾ cup Metta GF flour
  • ½ cup @oatly (or your favorite plant milk)
  • ¼ cup @justegg
  • ¼ cup water
  • 1 Tbsp organic sugar
  • 1/8 tsp salt
  • Oil or butter for cooking
  • ½ tsp vanilla extract (optional)
  • ¼ tsp nutmeg (optional)

Directions

  1. Pour all the ingredients in a blender and blend until smooth. If you don’t have a blender, whisk them well in a large bowl. add milk and egg (or their replacement) and whisk well. If batter is too thick, add just a little more milk or water. Let it sit for 5 minutes while the non-stick skillet or iron skillet heats.
  2. Once the skillet is heated, maintain the heat at medium, pour some oil or butter and swirl it around.
  3. Add 1/4 cup of the crepe batter and swirl the pan around until the batter is evenly spread out.
  4. When you see bubbles forming in the center of the crepe, flip it and allow to cook for another 90 seconds.
  5. Repeat for the next one. Recommend using oil or butter for each crepe.
  6. Stack the crepes on a plate to keep them warm. Serve warm or at room temperature filled with butter, melted chocolate, jam, etc. They are folded here. Topped with fresh citrus zest. Remaining zest mixed with sugar and dusted the crepes with the zesty sugar before eating. Enjoy!
