These onion rings are crispy and so easy to make at home!

Total time: 25 minutes
INGREDIENTS:
- 1 medium onion, sliced
- Oil for frying
- ½ cup Metta flour (¼ cup for batter and other ¼ cup for dusting the unfried rings)*
- ½ cup non-dairy unsweetened milk
- 1 Tbsp oil
- ¼ tsp baking powder
- ¼ tsp salt
- ¼ tsp sugar
- ⅛ tsp cayenne pepper**
- ⅛ tsp paprika**
Note: *I don’t always use the dry flour for dusting the unfried rings, so you can skip this step, unless you find that the wet batter sticks better after dipping the rings in the dry flour first.
**You can use any other ground herbs and spices you prefer to flavor the batter like a pinch of black pepper, onion powder, cilantro, rosemary, garlic powder, etc.
DIRECTIONS:
- Preheat oil in heavy bottomed pot on medium-high heat or until a thermometer reads 375 degrees F.
- Slice onions into ¼” slices and separate into individual rings.
- Place ¼ cup Metta flour in one bowl.
- Mix ¼ cup Metta flour with salt, sugar, baking powder, and all your herbs and spices.
- Add the non-dairy milk and oil to the dry mixture and stir well to blend it all together.
- Dip the rings in the dry flour. Then into the wet batter. Using a fork, without poking the ring, lift the entirely battered ring out of the batter and then CAREFULLY place in the HOT oil.
- Fry until browned, flipping over once. Serve hot and enjoy 😊 To serve later, keep warm in 275 degree F oven on paper-lined baking sheet.
