Vegan and oil-free lemon cookies that are infused with fresh lemon juice and vanilla. Moist, soft, and delicious! Easy one bowl recipe with only 9 ingredients!

Bake time: 10 – 12 minutes
Total time: 20 – 22 minutes
INGREDIENTS:
- ¾ cup Metta GF flour
- ¾ cup almond flour
- 2 Tbsp vegan sugar (sub coconut sugar)
- ¼ cup maple syrup
- 2 Tbsp fresh lemon juice + 1 tsp fresh lemon juice and zest of 1 lemon
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 2 tsp pure vanilla extract
- ¼ tsp salt
- (optional) glaze topping: 2 Tbsp of vegan powdered sugar mixed with 1 tsp lemon juice
DIRECTIONS:
- Preheat the oven to 350°F then line a baking sheet with parchment paper.
- In a bowl, add all the dry ingredients and whisk well.
- Next, add all the wet ingredients and stir well for 1-2 minutes until it becomes thick and sticky.
- Put the batter in the fridge to chill for about an hour so the batter fluffs up. This will create soft and fluffy cookies.
- After the dough has been chilled, using a cookie scooper, scoop the dough onto the lined pan.
- Bake for about 10-12 minutes.
- While the cookies are cooling, make the lemon sugar glaze. Once cooled, decorate the cookies with the glaze and let the glaze solidify for another 15 minutes and if needed put them in the fridge then enjoy 😊
