Healthy, tasty, and super easy to make protein mug cake using Metta Gluten Free flour. Besides being gluten free, it is also vegan. Ready within minutes. A delicious healthy treat for breakfast, after workout snack, or a single-serve dessert.

TOTAL TIME: < 10 minutes
INGREDIENTS
Cake
- 2 Tbsp Metta GF flour
- 1 Tbsp vegan protein powder, vanilla flavored
- 1 Tbsp sugar (I used brown vegan sugar)
- ¼ tsp baking powder
- 1 ½ Tbsp vegan butter, melted
- 1 ½ Tbsp non-dairy milk (I used oat milk)
- ¼ tsp vanilla extract
- (optional) 1 or 2 of the following, 1 Tbsp vegan chocolate chips, any nuts, dry fruit, or any fresh fruit
Toppings (optional)
- Maple syrup
- Chopped nuts
- Fruits berries, sliced strawberries, or any other fruit of choice
- Coconut whip
INSTRUCTIONS
- Grease a small ramekin or a shallow mug or a bowl. Set it aside
- In a small bowl, mix together the dry ingredients (Metta GF flour, protein powder, sugar, and baking powder).
- In another bowl, blend in all the wet ingredients (butter, milk, vanilla extract).
- Mix the dry ingredients into the wet ingredients.
- If desired, fold in the optional ingredient.
- Pour the batter into the greased ramekin.
- Microwave on high for 1 minute initially. I had to do another 15 seconds for it completely cook.
- Carefully remove the hot ramekin or bowl. Let it cool for 3 -5 minutes. Garnish with topping(s) of your choice. Here I used cut bananas, dried wild blueberries, and chopped pecans and enjoy 😊
