Gluten Free Pumpkin Waffles made with Metta Gluten Free Flour

These pumpkin waffles are fool-proof gluten and dairy-free waffles. Crispy on the outside and fluffy on the inside.  So easy to make. Everyone in the family will love them.

PREP TIME: 10 minutes

COOK TIME: approximately 3-5 minutes per waffle

TOTAL TIME: 30-40 minutes

Yields: 8 7-inch waffles

INGREDIENTS

  • 1-1/2 cups Metta gluten-free flour
  • 2 Tbsp granulated sugar
  • ¼ tsp salt
  • ¼ cup pumpkin puree (canned)
  • 4 Tbsp coconut oil (other vegetable oils do not work as well)
  • 2 eggs (or egg replacement for vegan option)*
  • 2 tsp pure vanilla extract
  • 2 Tbsp gluten-free baking powder (add last)
  • 1 cup almond/ soy dairy-free milk for vegan (dairy milk for non-vegan option)
  • 1 cup water (may need up to ¼ cup more to adjust for desired consistency)

*Notes: For the best vegan option, use 6 tablespoons of aquafaba or flaxseed egg. To make flax egg, combine one tablespoon of ground flaxseed and three tablespoons of water and allow to sit for about 5 minutes.

INSTRUCTIONS

  1. Preheat waffle iron. If using flax eggs, prepare the flax egg (instructions in notes above).
  2. In a large bowl whisk the egg, sugar, pumpkin puree, salt, vanilla extract, and coconut oil together.
  3. Add Metta gluten-free flour to the egg mixture and mix or whisk until fully combined.
  4. Stir in milk and mix (should be a thick dough consistency).
  5. Stir in water and mix until smooth (add additional water if still too thick).
  6. Add gluten-free baking powder and mix thoroughly. Let batter rest for at least 5 minutes before cooking.
  7. Scoop the batter onto waffle iron.
  8. Top with vegan butter, maple syrup or favorite toppings. Enjoy!

Notes:

  • Additional ingredients like chocolate chips, nuts, blueberries, etc., can also be added after all other ingredients have been mixed together and prior to the rest period. We added chocolate chips in the waffles in the picture here.
  • While hand mixing works fine for pancakes, we’ve achieved our best waffle results using an electric mixer.
