A gluten free and vegan “delectable” chocolate cola cake “guaranteed to rock your world.”

Total time: 45 – 50 minutes
INGREDIENTS
Cola Cake
- 2 cups Metta flour
- 2 cups sugar (sub coconut sugar)
- ½ cup plant milk
- 1 cup vegan butter (sub coconut oil)
- 1 cup cola (sub any soda not diet)
- 3 Tbsp cocoa powder
- 2 Tbsp flaxseed meal
- 2 ¼ tsp baking powder
- ½ tsp baking soda
- 2 Tbsp apple cider vinegar
- 1 tsp pure vanilla extract
- Pecans for garnish (optional)
Fudgy Cola Frosting
- ½ cup vegan butter
- ½ cup cola (sub any soda not diet)
- 3 Tbsp cocoa powder
- 1 ½ cups small vegan marshmallows
- 32 oz or 4 cups powdered sugar
- 1 cup chopped pecans (optional)
DIRECTIONS
Cola Cake
1. Preheat oven to 350ºF. Grease/flour 9×13-inch baking pan.
2. In large bowl, whisk flour, sugar, baking powder & baking soda.
3. In small bowl, whisk milk, flaxseed meal, vinegar, & vanilla.
4. Add butter, cocoa & cola to small saucepan over medium-high. Cook just to boiling, reduce heat & stir occasionally until butter melted. Remove from heat.
5. Make well in center of flour & sugar mixture. Pour in milk mixture then buttery mixture. Whisk until smooth & well combined.
6. Pour batter into baking pan & smooth top. Bake 25 min, checking doneness w/ wooden pick inserted in center after 20 min.⠀
7. Place pan on wire rack. Make frosting, pour over cake, & smooth top. Garnish w/ pecans.
8. Let cool completely before serving. Store covered leftovers in fridge, but bring to room temperature before serving.
Cola Frosting
1. In large saucepan over medium-high, bring butter, cola, marshmallows & cocoa to boil. Reduce to simmer & stir occasionally till melted.
2. Remove from heat & whisk in confectioner’s sugar, 1 cup at a time, until smooth & completely incorporated (likely will not need to use all 32 oz). Stir in pecans & immediately frost cake.
