Delicious and easy to bake gluten free and vegan Nan Khatai. Tastes so good no one will miss the gluten!
Yields: 8-10 biscuits

Cook Time: 10-12 minutes
Total Time: 20-22 minutes
INGREDIENTS:
- ½ cup Metta flour
- 3-4 Tbsp melted coconut oil (ghee or butter for non-vegan)
- 3-4 Tbsp sugar
- ¼ tsp baking powder
- ½ cardamom powder
- ¼ tsp nutmeg
- If needed, ½ tsp milk (dairy or non-dairy)
DIRECTIONS:
- Preheat the oven to 350°F then line a baking sheet with parchment paper.
- In a bowl, mix well Metta flour with baking powder, cardamom powder, and nutmeg.
- In a separate bowl, mix and stir sugar and oil until creamy consistency is reached.
- Combine and mix well the dry ingredients to the wet mixture. It should be like a dough. If it’s dry and breaking, add ½ teaspoon of almond milk.
- Make small dough balls, flattening them a little on the baking sheet or tray. Then use a knife to make a shallow plus on the top of the dough balls. You can also garnish each dough ball with crusted pistachios or any other nuts.
- Bake for 10-12 minutes until light brown around each biscuit. Cool for 15 mins then enjoy! These taste just like the real deal nan khatai biscuits only healthier 😊
