Nan Khatai (Indian Biscuits)

Vegan Nan Khatai biscuits using Metta Gluten Free Flour

Delicious and easy to bake gluten free and vegan Nan Khatai. Tastes so good no one will miss the gluten!

Yields: 8-10 biscuits

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Total Time: 20-22 minutes

INGREDIENTS:

  • ½ cup Metta flour
  • 3-4 Tbsp melted coconut oil (ghee or butter for non-vegan)
  • 3-4 Tbsp sugar
  • ¼ tsp baking powder
  • ½ cardamom powder
  • ¼ tsp nutmeg
  • If needed, ½ tsp milk (dairy or non-dairy)

DIRECTIONS:

  1. Preheat the oven to 350°F then line a baking sheet with parchment paper.
  2. In a bowl, mix well Metta flour with baking powder, cardamom powder, and nutmeg.
  3. In a separate bowl, mix and stir sugar and oil until creamy consistency is reached.
  4. Combine and mix well the dry ingredients to the wet mixture. It should be like a dough. If it’s dry and breaking, add ½ teaspoon of almond milk.
  5. Make small dough balls, flattening them a little on the baking sheet or tray. Then use a knife to make a shallow plus on the top of the dough balls. You can also garnish each dough ball with crusted pistachios or any other nuts.
  6. Bake for 10-12 minutes until light brown around each biscuit. Cool for 15 mins then enjoy! These taste just like the real deal nan khatai biscuits only healthier 😊
