Metta Gluten Free Flour Brownie Bites Recipe

Easy to bake brownies bites that are so decadently chocolatey and moist. Ideal for a guilt-free any time snack or small after meal dessert 😋

Prep time: 10 – 15 minutes                                                                                       

Cook time: 12 – 14 minutes

Total time: 22 – 29 minutes

Yields:        24 – 28 bites

INGREDIENTS:

  • ½ cup Metta GF flour
  • ½ cup vegan cane sugar (or coconut sugar)
  • 2 Tbsp pre maple syrup
  • ⅓ cup coconut oil (melted, or sub any oil)
  • 3 – 4 Tbsp (depending on how chocolatey you prefer) unsweetened cocoa powder
  • 1 egg (vegan version, 1 Tbsp Apple Cider Vinegar + 2 Tbsp unsweetened plant milk)*
  • ⅓ – ½ cup chocolate chips (or any vegan chocolate chips)
  • 1 – 2 Tbsp water or unsweetened plant milk (only if needed)*
  • ¾ tsp vanilla extract
  •  tsp gluten-free baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt

*Note: Results may vary with the egg substitute. It may be less fluffy, but still delicious! The plant milk is only needed if the batter is too dry, but it’s probably not necessary.

DIRECTIONS:

  1. Preheat oven to 350 F and lightly grease the 24-cup mini muffin tin (I use either olive or avocado oil) or line the muffin tin with mini baking cups.
  2. In a bowl, add coconut oil, sugar, maple syrup, egg or egg substitute, and vanilla extract. Whisk to combine.
  3. Add all the dry ingredients in a separate bowl (Metta flour, cocoa powder, baking powder and soda, and salt. Mix well.
  4. Combine the dry ingredients to the wet ingredients and mix well.
  5. If needed, add the additional water or plant milk and mix . The batter should be scoopable, not pourable.
  6. Finally, fold in the chocolate chips.
  7. Using a small cookie scoop, scoop batter into baking cups (about 2/3 filled).
  8. Bake on the center rack for 12 – 14 minutes or until toothpick inserted in the center of one brownie comes out clean with no batter. Allow to cool for 10 – 15 minutes and enjoy 😋
  9. Can be stored in an airtight container at room temperature for 2 days or in an airtight container in the fridge for 5 days.
