YIELD: 12 Cupcakes

Incredibly delicious and easy to bake chocolate cupcakes! With Metta gluten free flour, they come out moist, fluffy, and great tasting, even without eggs or egg substitute! No one will ever know they are gluten-free and vegan!
Ingredients
Cupcakes
- 1 ½ cup Metta flour
- 3 Tbsp cocoa powder
- 5 Tbsp oil of choice
- 1 ⅓ cup sugar (I used Zulki’s brown sugar)
- ¼ tsp salt
- 1 tsp baking soda
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- ½ cup + 2 Tbsp water*
- ½ cup non-dairy milk**
Chocolate Frosting
- 3 ¾ cups vegan powdered sugar
- 4 Tbsp unsweetened cocoa powder
- 3 Tbsp vegan butter, softened
- 4 -5 Tbsp non-dairy milk
- 1 tsp vanilla extract
NOTE: *If you like, you can skip the milk altogether and just use water (about 1 cup and 2 tablespoons). The difference in taste is minimal, the cupcakes will be slightly less rich in taste, but they will still come out moist and tender.
**If you don’t care to make it vegan, use regular dairy milk.
Instructions
- Preheat oven to 350 degrees F. Line cupcake baking tins with cupcake liners.
- In a large bowl, mix Metta flour, cocoa powder, sugar, baking soda and salt.
- Form 3 wells in the dry mixture. In each well, add the vinegar, vanilla extract, and oil. Mix them well until combined.
- Add the water first then mix. Next, add the non-dairy milk and mix well until the batter is becomes smooth.
- Pour the batter in each cupcake liner evenly, approximately 2/3 full.
- Bake the cupcakes for 15 – 17 minutes or until the skewer test comes out clean. Mine took 17 minutes to bake completely.
- Remove from the oven and allow them to cool for at least 10 minutes before decorating it, if you wish to do so and enjoy! We made these in October, hence the Halloween decorations.
